Product Information

Product Information & Storage

Our products are delicately balanced, sensitive in texture, and respond to environmental influences.
With just a little care in how you store them, you can preserve their quality and freshness for a particularly long time.

01 Chocolate & Jelly Like It Dry

Chocolate should be stored in a dry place, and temperature shocks should be avoided.

Chocolate should be stored in a dry place, and sudden changes in temperature should be avoided.

Moisture is the natural enemy of both chocolate and sugar-coated jelly.
When chocolate moves from a cool place into a warmer environment, condensation forms — causing what’s known as sugar bloom: small, rough sugar crystals on the surface.

Tip: Keep the chocolate in its packaging until it has adjusted to the new temperature, and always store it in a dry place.

Sugar-coated jelly also dislikes humidity – sugar attracts moisture, which makes the jelly sticky.
So always store it in a dry, airy place, away from sudden temperature changes.

02 Chocolate Doesn’t Like Heat

The ideal storage temperature for chocolate is between 12°C and 20°C, without frequent fluctuations.
Otherwise, fat bloom may occur – usually caused by cocoa butter.

Fat Bloom
Chocolate feels most comfortable between 12°C and 20°C.
If it gets too warm, a whitish, soft coating may appear – a result of cocoa butter rising to the surface.
It might not look nice, but it’s completely harmless.

Jelly also suffers from heat – it begins to “sweat” and loses its firm texture.

IIn short: avoid sunlight and pressure; choose a cool, shaded, and quiet spot instead.

03 Chocolate Is Sensitive to Odors

Especially white chocolate tends to absorb surrounding smells quickly due to its high fat content.
Therefore, never store it near strong-smelling foods, and keep it tightly sealed whenever possible.

04 Chocolate Needs Darkness

ILight and oxygen cause oxidation – a process that alters the flavor of fats.
The result: an unpleasant odor and a dull taste.

Our tip: store chocolate in a cool, dark, and airtight place – that way it will taste as good as on the very first day.
